Vegan MoFo, Day 1: Curry is for Lovers

As a response to a mind-blowing discussion shared with a friend several weeks back on the ole Facebook, I decided to create a "Foodies" theme for Vegan MoFo. (Plus, I learned about MoFo being in October this year the day after said convo occurred, so I was still a TAD BIT offput.)

Basically, the here's the gist:
-friends post about having a great experience eating pho
-I comment that I also made it (SUCCESSFULLY THIS TIME!) that same evening and linked my blog post
-one friend decided to take it upon himself to point out that I couldn't call the concoction I made and consumed "pho" because it wasn't made of "animal-bone-rendered-until-its-soul-turned-to-delicious-broth" and then suggested that I had to call it something else, not unlike the case with Champagne.
-I suggested that the term I had used, "Vegan Pho," should have been enough of a qualifier for what the hell I meant, so I started calling my food "shit in a pan" or "weird stuff that looks like X," you know, so there wasn't any confusion.
-Then I told him to "Phok Off." (hey there, friend, if you're reading this, no hard feelings, but you pissed me off at the time, kthx!)

So, here we are, on Day ONE of Vegan MoFo, and I decided to make something positive out of this negative BS.

And I begin my journey through Vegan MoFo and October with a curry.


I hate curry...hate hate hate it. I've never liked it. The taste...the smell...it just weirded me out.

But I felt a major craving for it last week after seeing it in several magazines and sites. I decided to build upon the Chickpea Curry from The Vegan Stoner and also make the coconut rice recipe from the Vegetarian Times Healing Foods mag that I picked up recently.

Curries are an interesting thing. They are big in Britain, acquired from colonial days in India and adjusted to their liking. There are many different ways to make a curry, many different ingredients and formats to use (you can even make curry soups!). And curry powder was something entirely made up by the British.

So it only fits that a curry would go with my theme. People seem to go ga-ga for it, have their favorite curry-serving restaurants, and like to make it at home.

Here's the result:


"Some Bean Sh*t and Sauce over Rice"
makes 3-4 servings, adapted from The Vegan Stoner and Vegetarian Times

curry
coconut oil (I used the new Earth Balance Coconut Spread)
1 green pepper, diced
2 carrots, sliced into half-coins on a bias
1/2 a yellow onion, diced
3 cups cooked chickpeas (usually 1 cup before cooked)
1/2 can lite coconut milk
onion powder, S&P, curry powder, smoked paprika (I just basically added these until it looked right...)
3 green onions, sliced



topping
1/4 cup flaked, unsweetened coconut
1/8 cup raw sesame seeds

Make the rice according to the recipe (this should be done first, you can make the other two components while this is finishing).

Saute the carrots, onion, and green peppers in coconut oil/spread, about 5-7 minutes. Add cooked chickpeas and continue sauteing until heated through. Add the 1/2 can of coconut milk (the other 1/2 can is used in the rice recipe), stir and lower heat until simmering. Add spices, mix, and continue simmering for about 5 more minutes.

Meanwhile, in a small pan, toast coconut and sesame seeds together, making sure to stir often. There will be a little oil given off while toasting that can coat the seeds and coconut, but it will also make them stick to the bottom of the pan and burn, so make sure to keep stirring often.

Stir the rice, spoon it into a bowl, top with the chickpea mixture, followed by the seeds/coconut and sliced green onions.

Eat, enjoy, and realize that you DO, in fact, like curry.

LAST VEGAN MOFO POST...*SNIFFLE*

I am so proud that I got to be a part of this wonderful group of people here. I've read some superb posts by fellow bloggers, some really dynamic and creative stuff! And it made me want to strive to emulate just a fraction of the greatness I was seeing.

You all are very special. You see the possibilities of a simple carrot and the beauty within it. Be proud of what you have done and will continue to do with whatever your veg background is or will be. Thank you for one of the best months I've certainly ever had before. I think it should really be a bi-annual thing, but I'm not complaining :) At least you would get a taste of seasonal foods on the OTHER side of the year!

Please continue reading. I know I will continue reading more lovely and brilliant blogs in the future. I'm still pumped!

In other news, here's what's on my plate:

I made stuffed and baked mushroom tops from the PETA Vegan College cookbook (except they microwave them).



Basically it's mushroom tops stuffed with bread crumbs, Earth Balance, chives and the stems (finely diced). To that, I added diced black olives, garlic and onion powder and S&P and topped them additionally with mozz. Daiya (and vegan Worcestershire, which was The Hubs' idea). And I baked them. Yum!



And here's dinner from the previous evening. A quick chickpea salad, also from PETA's college cookbook. Just chickpeas, Vegenaise, and chopped celery. I also added fresh dill, sriracha, minced shallot and paprika. And put it on a bun, which actually worked out quite well for me!

Arty Chicks

Oh brother, this was one of my favorite Vegan MoFo meals thus far! I've been wanting to make more recipes from Vegan YumYum (thus the muffins early this week...). My choice tonight: Golden Chickpea and Artichoke Salad.

Except I didn't food process my almonds, still great!

It's so easy and filling...GREAT recipe, you should totally check it out! Another bonus: it's super cheap!

In the background: Silk's Mint Chocolate! I'm still a kid at heart.


Can anyone else smell the weekend coming? I can almost taste it (seriously, if it doesn't get here soon, I won't just be crying on the inside.)...

Baked Chickpeas, 2 Ways

Hey MoFos,

Hope you're all having a ball with the posting. I know I sure am!

I wanted to take a minute to tell about the importance of experimentation with food. I've had yummy recipes and horrible, gag-inducing recipes (pesto gone WAYYY bad, still have nightmares). And sometimes, when it's 9:00pm one night when you're bored out of your ever-lovin' mind, experimenting with food is what it takes to keep you from repeatedly bashing your face on the coffee table. Right, so...

Last night, I resumed my obsession with chickpeas and made baked them two ways.

Left side: Spicy Chickpeas with Paprika, Cumin, and Cayenne (they ended up needing more of each)
Right side: Nooch-tastic Chickpeas with Garlic Powder, Oregano, and NOOCH.

I made a little foil divider to keep the spicy and "cheesy" sides separate. Like my zombie baker cookie cutter? Nothing to do with this recipe, he was just hanging out on the counter and wanted to pop in to say, "Nunnnmmmgggg..."

I digress.

I baked the chicks at like 400 or 425, I forget (I've slept since then) for about 30 minutes. Just have to keep an eye on them to make sure they get crunchy but don't burn.


One other thing: probably not the best idea to store them in plastic baggies. I brought some to work today, and they were a right mushy mess towards the end of the day when I wanted to nosh on something while driving home from work (I've been getting carsick like every time I drive this week...hmmm...)

I've DREAMED of this thing for YEARS. Y-E-A-R-SSsssssssss...

Thanks to Robert and Anne, two of my new parents-in-law, it's a reality!

When I took it out of the box tonight, I LITERALLY made the "angelic noise." You know, **"ahhhhhh..."**sparkle**tears in eyes**. Yeah, I totally dorked out.

But who wouldn't????????????

And here it is next to the lovely Giada food processor. My old Black and Decker (old, as in like 4-5 years?) needs a loving, new home. Hello, garage sale!

Peasant Supper Sundays

I think we may have a new tradition here.

Peasant Supper Sundays began a few weeks ago for Philip and I when we realized that we make good, simple food for our Sunday dinner. Not exactly a "Eureka!"-type moment, but inspiring nonetheless.

We tend to eat different meals when together, since I'm vegan, and he is a flexitarian (eating meat more and more now but not so much at home as out with friends).

Several dishes we've had lately are baked potatoes, "meat" pie (Philip's creation), couscous with roasted chickpeas, vegetable soup.


On the wedding front, 99 days left!!!! Things are coming together but will MUCH more so in August (I hope...).

Tomorrow morning will consist of a venture to the farmer's market (or maybe 2 of them). And then later in the day we're registering at Target :)
