The rain continues. It's been dreary and raining alllll weekend here, and I'm not sure there's an end in sight (plus, I haven't seen the 7-day forecast lately). It's really quite beautiful at times, exploring the back yard and trees and ivy vines at our new house. And then sometimes it's downright depressing and makes us feel like we are getting ill.
What remedies this? What is there that can inject sun into my heart not unlike the shot of adrenaline given to Uma Thurman in Pulp Fiction? Spicy food and soup, combined.
Southwestern Veggie Noodle Soup, AKA:
"Holy Shit Yum, And Also Burning! Soup"
serves 2 spicy bowls
4 cups water
2 bouillion cubes (no-chicken or no-beef flavored)
1 carrot, sliced
1 shallot or very small onion, diced
1/2 jalapeno, seeds removed
frozen peas and corn
1/4 cup cooked pinto beans
1/4 cup dried noodles of your choice (I had wagonwheels LOL)
fresh cilantro
1 tsp lime juice
Boil water in saucepan, add the bouillion cubes and jalapeno half. Add carrots and onions and boil until tender (about 5 minutes). Add peas, corn, ointo beans, and noodles. Boil until noodles are cooked.
Put cilantro into bottom of bowl, spoon soup over, and drizzle in lime juice.
Eat, feel better, repeat (or take a lovely rainy day nap).
