Owwies.

I'm still running/fast-walking! It was quite chilly this morning with the moisture and low-30s, but I stuck it out for another morning. Hopefully my legs and (lack of) abs rebound better tomorrow morning. Definitely stiff today, owwies.

Here's the end result of the Seitan's Pot Roast from Peasant Supper Sunday:

It was OK. If I make it again, I will probably tweak the flavors more--maybe add some lemon juice, more soy sauce/ketchup, more spices. The veggies tasted pretty good. I ended up freezing two servings for later.

Peasant Supper Sundays: Seitan's Pot Roast

Look what we're having for dinner!

It's cooking away in our kitchen right now. And the coolest part of it so far was that I had all the ingredients already. That's totally peasant of me.

And this was my "brunch"--I had the seitan going before I ate anything, just worked out that way, but this smoothie was a welcome relief to my tummy.


{soymilk and leftover choc. almond milk, chia seeds,
handful of choc. chips, TBSP cocoa powder, 1 froz. 'nana}

Now we're off to see Philip's Mutti and do some grocery shopping. Happy Sunday!

Peasant Supper Sundays: Beans, Beans, the Magical Fruit...

"Beans, Beans For Every Meal!"

That's what I was thinking when I whipped up a huge batch of Rosemary Navy Beans for dinner tonight. It will last me for lunch all week ("all week" = 3 days...short week, YAAAAAAAY!).


Just your basic navy beans recipe with chopped onion, carrot, celery and minced garlic. I added a bunch of stuff to it, like hot sauce, 2 small sprigs of rosemary, S & P, coriander (just a pinch), vegan Worcestershire, and some dried marjoram. After cooking all together in one big, happy pot for about an hour (provided you soaked or cooked your beans ahead), you are rewarded with a toot-inducing bounty. Yup.



On to another crap-tastic week. At least it's short. Maybe I'll eat these beans on toast...or with ketchup! :)

Chili Bean Dip & Cornbread...Mmmmm...

Hey MoFo'ers!

I've been on a chili kick lately. I wanted chili again last night, but differently. So I food processed my chili leftovers from the Peasant Supper Sunday.

Yes, I used my already cheap leftover chili, added one more $0.68 can of chili beans to the mix, lime juice, some cubes of tofu leftover in the fridge (for texture), more spices, and ate the HECK out of it!



Sounds weird, doesn't it? But after it was heated up and piping hot, this chili bean dip (basically hummus without the tahini, if you will) was sooooooooooooooooo good.

I also made the ever-wonderful Sweet Cornbread Cake to go along with the Chili Bean Dip goodness and had some avocado on the side, for good measure :)

Coming up tomorrow: "Night of the Living Acorn Squash!!" (wait, that sounds gross...). Maybe "Acorn Squash, You Complete Me." (Meh.) Ok, how about "An Acorn Squash Three Way." (dirrrty, but not me.) You'll just have to wait and see. Biggest post eva...

One more thing that I have to tell you...I am so very excited for tomorrow. You know what tomorrow brings? A PACKAGE FULL OF DAIYAAAAA. Yeah. I am still Jonesing like no other. For dinner tomorrow, that wicked awesome Daiya "cheesey" bread recipe I saw earlier this week.

Peasant Supper Sundays 10/17


Heck yeah! Can't wait to start Vegan MOFO! I will be SO done with the wedding by then, you all have no clue (well, maybe you do if you've been married before, I guess).

Anyhoo, for Peasant Supper Sundays this past weekend 10/17 I made a variation on a recipe I found in Clean Eating from last month (Sept 2010 I think?). That magazine is pretty good for recipe inspiration, first time buying it.

Here's my version of their Hearty Lentil Soup:


3 cups green lentils (they used red--couldn't find red and was at the grocery store way too long to care)
1/2 cup brown rice
1 yellow onion, diced
2 cloves garlic
1 red bell pepper, diced
5 cups water (could use stock as well)
red pepper flakes (to taste)
cumin (1/4th tsp?)
S & P
whopping handful of kale
2 small potatoes, diced in large chunks (I had a purple and a red potato, added both)


Basically, I cooked the onions garlic, and bell pepper in a large pot in olive oil. Added the potato, lentils, kale, and rice, plus the 5 cups of water and seasoning, and had it on a low simmer for about 50-60 minutes. Yummy, full of vitamins, and so easy. Plus, for me, it made like 5 servings, which is great for a healthy lunch.

I did forget to rinse my kale (I know, I know!!! UGH!), so it was a little gritty, but only at the bottom of the soup. I actually got so excited when I cut into the purple potato (didn't know it was purple) that I literally squealed with glee and ran through the house to show Phil. I went to K-State (GO CATS!) so this was pretty squeeee-worthy for me.

Peasant Supper Sundays

I think we may have a new tradition here.

Peasant Supper Sundays began a few weeks ago for Philip and I when we realized that we make good, simple food for our Sunday dinner. Not exactly a "Eureka!"-type moment, but inspiring nonetheless.

We tend to eat different meals when together, since I'm vegan, and he is a flexitarian (eating meat more and more now but not so much at home as out with friends).

Several dishes we've had lately are baked potatoes, "meat" pie (Philip's creation), couscous with roasted chickpeas, vegetable soup.


On the wedding front, 99 days left!!!! Things are coming together but will MUCH more so in August (I hope...).

Tomorrow morning will consist of a venture to the farmer's market (or maybe 2 of them). And then later in the day we're registering at Target :)
