Baked Bananas
slightly adapted from Meatless Meals, page 105
serves 1 (me!)--supplies starch and sugar
1 large banana
1 Tbsp lemon juice
2 tsp sugar
Preheat oven to 400 degrees F. Wash banana and dry. Remove one section of banana skin, and try to pull back the skin from the rest of the banana (see photos). Once in a baking dish, drizzle exposed banana with lemon juice and sprinkle with sugar. Bake for 10 minutes until banana is tender, then turn oven to broil. Watch the banana during this time (about 2 minutes)! Remove from oven and let cool slightly before eating (lest you want blisters on the roof of your mouth).
The recipe was written for four servings--four bananas--but I just wanted one all for myself. You can also top it with whipped cream, according to the book. I bet some whipped coconut cream or other vegan whipped cream would be nice. You could also flavor with cinnamon or pumpkin pie spice or top it with walnuts. For me, this was perfect as is.

This definitely goes in my simple pleasures list. Bananas are the ultimate convenience food - good hot, good frozen, good on their own. What's not to love?!

ReplyDeleteOk, the concept of baked bananas is completely new to me - like, two minutes ago, new to me - but I'm daydreaming of a baked banana topped with coconut whipped cream and cacao nibs.
