During the Xmas season, my mom and I would bake many different kinds of cookies from Gems from the Wheat State, box them up, and distribute them to friends and family as an extra gift. The process took a long time but proved to be worth it. This recipe is originally a delicious peppermint-flavored cookie. I only had lemon extract on hand and decided to twist it up. So glad I did!
Meltaway Cookies
adapted from Gems from the Wheat State, pg. E56, contributor Leona Layne
makes about 20 cookies
1/2 cup vegan margarine
1/4 cup sifted powdered sugar
1/2 tsp lemon extract
1 1/8 cup unbleached AP flour
1/8 tsp salt
Cream the butter and sugar together, add extract. Add flour and salt to butter mixture and mix well. Roll dough into balls and place on a parchment paper-covered pan. Bake at 400 degrees F for 8-10 minutes until dough has firmed but not browned. Roll warm cookies in powdered sugar.
These are fabulous cookies and really tasty as lemon instead of peppermint! Soft, moist, and easy to chew, they are very true to their name. Perhaps I'll mix up some batches this winter for Xmas gifts.
