Vegan MoFo, Day 11: Recipe for Love Handles

Nothing says "how's about some calories?" like a Mac & Cheeze Grilled Cheeze Sandwich.

You heard me.

No, this is not the state fair. It's not a food-eating competition. It's just me...writing about "foodie" foods and totally enjoying the hell out of Vegan MoFo. Because I'd probably never eat this in real life :)


"Oh Golly, Were Those Love Handles There Before? Yum-licious Cheezy Recipe"
serves a heaping portion of calories

mac and cheeze
1/2 box macaroni noodles
1/2 cup cheddar Daiya
2 tbsp Earth Balance
2 tbsp nooch
1 cup soymilk
S&P
1/2 tsp onion powder
pinch nutmeg
sprinkle red pepper flakes

2 slices whole grain bread (I have Ezekiel 4:9 on hand)
slather of Earth Balance for 1 side of each slice of bread
sprinkle of cheddar Daiya shreds

Cook the macaroni according to the directions on the package. Drain. In a small sauce pan, add the Earth Balance, nooch, S&P, onion powder, nutmeg, red pepper flakes, soymilk, and Daiya shreds. Stir, stir, stir. Pour over drained pasta in large pan and let sit for a few minutes to solidify. If the mixture is too runny, it will not work for the next step.

Heat up a panini press or griddle pan. Spread Earth Balance on one side each of the two slices of bread.

Panini press owners: place both slices of buttered bread on a plate. Top slices with a little Daiya, spoon on the mac & cheeze, and put the two slices together. Place on panini press and press that thing!

Griddle owners: toast slices independently on the griddle. Add Daiya shreds to both slices, spoon mac & cheeze onto one slice of bread, and carefully put the slices together.





Oooey, gooey goodness. Bring it on! Extra serving of mac & cheeze on the side? Don't mind if I do.

I'll just go to more hot yoga classes :D

  1. holy moly! that is a serious sandwich... seriously awesome that is! as a crazy carbo-holic myself, i should have never clicked on this link... but the oooey gooey goodness was calling my name... do i dare?!? i think so! ;)

  3. Now that is what I'm talking about. My partner has been begging me to make a really gluttonous mac & cheese, like on a pizza or in a burrito, but I think this mac & grilled cheeze would be best!
