Sometimes I just want some dang hot chocolate. Now is definitely one of those times.
And I want some whipped "cream." Pronto.
I used the coconut whip recipe from Healthy. Happy. Life. It didn't quite WHIP for me, but I think that's because I only had ONE can of full-fat coconut milk to work with. Still, it made for a yummy syrup, and there's a ton of it that I saved for future cravings.
Here's how my creation turned out:
"MMMmmmmmmm...All Better With Chocolate"
serves 2...but it was all mine!
2-3 cups soymilk
2 tbsp. cocoa powder
1 tbsp. bitter dark cocoa powder
splash chocolate extract
1 tbsp. granulated sugar or agave
Heat soymilk in a small saucepan. When warm, add the cocoa powders, extract, and sugar. You can either use a fork or small whisk to stir in the powders. Pour into a mug once hot.
Top with coconut whipped "cream" (read: syrup).
{yes, that's a Mr. Darcy quote, for all you Austen-philes out there}
Now go eat some chocolate!!

mmm, hot chocolate is my true love. I drink it all the time. I usually just use some hot cocoa powder, but every once in a while, when I am not so lazy, I make it properly from scratch. Looks great.
