Vegan MoFo, Day 21: Kitchen Sink Taboulleh and Roasted Red Pepper Hummus

It's been an easy week around here. I haven't fallen into the third-week slump, but I've also been busy and needed some quick dishes. Here's one, for example:

Kitchen Sink Taboulleh
-whole wheat coucous
-1 diced cucumber
-5 stalks green onion, sliced
-parsley
-basil
-mint
-lots of lemon and lime juice
-S&P

Roasted Red Pepper Hummus
-cooked chickpeas
-roasted red peppers
-tahini
-smoked paprika
-onion powder
-S&P
-lemon juice


{hummus is my fave, esp. this kind}

Nothing spectacular, but it was good, fresh, and filling. I used a TON of lemon in both recipes. I like my taboulleh to be tart!
