Vegan MoFo, Day 10: Apple Chip Cake

I think I've heard the term "pumpkin spice latte" more times in the last two weeks than I have in the entirety of my life. (I've even seen it abbreviated as "PSL.") So, as an alternative to that autumnal drink, or, better yet, as an accompaniment, here's something for you to nom.



Apple Chip Cake
adapted from Gems from the Wheat State, pg. E33, contributor Evelyn Schaefer
serves 12-16, depending on size of slice

3 cups cooking apples, unpeeled and diced (about 3 apples--I used golden delicious for their taste)
2 cups unbleached AP flour
1/2 cup white-whole wheat flour
1 tsp baking soda
1 tsp salt
2 cups sugar
1/2 cup whole pecans
3/4 cups vegetable oil
1/2 cup water
2 Ener-G "eggs"
1/2 tsp almond extract
1/2 tsp vanilla extract
scant 1/4 cup sugar
1 tsp cinnamon

Mix all ingredients and pour into a well-greased 13" x 9" pan. The dough will look really bulky and dry, but don't be fooled! It's not supposed to be a wet dough. Sprinkle top with sugar and cinnamon. Bake at 375 degrees F for 45 minutes.



 

It's the most mystical dessert, puffing up to encase the apple chips. Something so simple can be mesmerizing. This dessert would be absolutely delicious hot from the oven with some vegan vanilla bean ice cream. I devoured mine alongside some hot coffee, sat back in my chair, and decided that I loved life and the oncoming autumn.
