Vegan MoFo, Day 9: Sauerkraut with Apple

I used to LOVE eating sauerkraut. My mom and I had a favorite pork and sauerkraut dish that she made when I was a kid. The sauerkraut in it was tangy, salty, and delicious.

Since then, I've eaten it a few times and even made some of my own, but I think somewhere along the way I forgot how much I loved sauerkraut. It's one of those "guilty pleasure" vegetables that some people detest and a select few salivate over, like Brussels Sprouts or beets.

When I first smelled the sauerkraut that I used for this dish, it all came flooding back.

Baked Sauerkraut with Apple
adapted from Meatless Meals, page 173
serves 4, supplies phosphorus, calcium, and some sugar and other necessary mineral elements

1 large Honeycrisp apple
1 can or jar sauerkraut (about 1 1/2 cups)
2 Tbsp brown sugar

Slice apple into thin slices. In a greased baking dish, put in a thin layer of sauerkraut followed by a layer of apples. Crumble half of the brown sugar onto the apples. Repeat with one more layer. Cover with foil and bake at 350 degrees F for 25 minutes.

{my husband saw this and grumbled}

{I didn't think the apples would taste right}

{baked! ready to eat!!}

{this is the point where my husband was all, "Gross! The house smells bad!!"}

{caramelized yumminess}

You might find me eating a whole can/jar of sauerkraut by myself with a fork in the near future. And I have no shame about that.

Vegan MoFo, Day 25: Kielbasa Sausage, Your Butt Cheeks Is Warm...

Because that Tenacious D line has been playing in my mind since I made these puppies...

Finally got to dig out some sauerkraut! It didn't taste anything like what I (blocked out) remember it tasting like. The homemade sauerkraut was a little salty, but it did the trick for probably a lot less than buying the equivalent in canned.

So simple, no recipe needed.

-Wheat hotdog bun
-Tofurky brand Kielbasa
-Mustard
-Sauerkraut

It's so October, you know?

5 more days until our 1st wedding anniversary!!

Vegan MoFo, Day 19: Sauerkraut, or Learning To Love Stuff I HATE

You know what I hated growing up? Muther-fricking sauerkraut. The funky taste, texture...ugh, PUKE.

It was later when my mom made some pork dish with sauerkraut that I started to like it. Mind you, it was the canned stuff...and pork bone things (gag), but it kind of grew on me.

I decided to try making my own using Sayward's awesomely-easy directions from Bonzai Aphrodite (love that site, she's so wise!)

You guys, it's so easy!! I will have my fingers crossed until I make reubens later this week that it's not totally screwed up.

Hooray for another food-venture with Vegan MoFo!

What foods do you dislike? Have you given them a second chance?

Vegan MoFo, Day 16: Victory Shake!

I toyed with the notion of calling this a $5 "milk"shake, based on that superb scene from Pulp Fiction, buuuut when I chose a glass to pour the yumminess into, it became crystal clear.

This, my friends, is the Victory Shake.

That's right. My alma mater, K-State, is 6-0 in football. And, thus, the shake to rule them all.

"Go Cats! Shakes All Around!"
serves one Wildcat

3/4 pint Purely Decadent Chocolate Obsession soy ice cream
2 tsp bitter dark chocolate powder
1/4 cup soy milk

Mix all ingredients. Serve in a wicked glass. Enjoy.

In other news, today has been quite busy. We raked the massive mountain of leaves from the drive-way. I've been cooking all day. Have made roasted peppers, jalapenos, "sundried" tomatoes, and made some packets of pre-sliced and diced onions and peppers to freeze. Also made celery salt from celery leaves. And I made sauerkraut (instructions from Bonzai Aphrodite) that will be eaten later this week, if done.

Yay, productivity!
