Vegan MoFo, Day 7: Candied Orange Peel

I'm starting to feel like Julie Powell over here, guys (not cracking quite yet though). I needed some candy, stat.

Behold! Candy!

Candied Orange Peel
adapted from Meatless Meals, page 85
makes a bunch--supplies sugar and some organic minerals

3 oranges
1 1/2 cups cold water
3/4 cup sugar

Wash oranges and peel them (if you have one of those Pampered Chef Orange Peely thingies, it'll make short work of it!). Be sure to keep peels as intact as possible. Put peels into a pan, cover with cold water, and bring them to a boil. Once peels are tender (about 20 minutes), reserve 1/2 cup of the cooking water and drain the rest. Let peels cool until they are manageable, then fillet off the white pith, leaving the orange rind. A little bit of pith leftover is OK. Cut into strips. In the same pan, add the 1/2 cup reserved cooking liquid and the sugar. Boil the sugar mixture until it thickens. Add peel strips and boil another 5 minutes. Drain the peels. Once cooled enough to manage, coat the strips in granulated sugar and place them onto parchment paper.

These taste just like the candy orange slices I used to eat as a kid. So delicious and ADDICTING! I think I'll make some for the holidays as gifts.

  5. I'll definitely be trying this when the oranges on my tree are ripe--I always feel bad just throwing all those peels in the compost.
