Vegan MoFo, Day 19: Toffee Yule Logs

This. THIS! This recipe! Oh, ladies and gents, if I didn't have the self-will I possess, there's no way in you know where I'd be able to fit into my bridesmaid dress in a mere 16 days ALL BECAUSE OF THIS RECIPE. Holy mother. It's called Toffee Yule Logs, implying that you'll want to make it around the Xmas holiday. But in reality, it fits anytime of the year...New Year's Day, Memorial Day, Tuesdays...Just make sure to keep the log frozen and refrigerated. They'll keep their shape but be a little moist. Basically, it's vegan fudge.



Toffee Yule Logs
adapted from Gems from the Wheat State, pg. E41, contributor Florine Schneider
makes 15-20 luscious bites

3 oz (about 1/4 + 1/8 cup) vegan chocolate chips (I used Enjoy Life! brand)
3 oz Lieber's vegan butterscotch chips
1/3 cup soymilk
1/2 tsp vanilla extract
pinch of salt (about 1/8 tsp)
1 cup + 3/4 cup powdered sugar (sifted!)
1/2 cup crushed walnuts

Sift your powdered sugar. Do it not, lest you want to beat out the lumps later when a whisk... In a double-boiler, melt the chocolate and butterscotch chips with the soymilk. Mix thoroughly. Off the heat, add vanilla and salt. Mix in 3/4 cup of sifted powdered sugar thoroughly, then mix in the other 1 cup. Cover bowl and store in refrigerator for about 1 hour or until thick enough to handle (you'll know). Pour out fudgy goodness onto a sheet of waxed paper and form into a shape of a log. Clip ends shut and freeze for about 30 minutes. Take log out of freezer. On a new sheet of waxed paper, spread out a layer of crushed walnuts. Put log onto crushed walnuts and roll around until covered. Wrap back up into waxed paper and freeze for at least another hour (I did it overnight). Slice 1/2" pieces and serve. Be sure to keep cool.







Break out the fat pants, people. You're going to be eating fudge and watching Doctor Who all weekend (thanks, Gems from the Wheat State!).

  2. Must make this soon! Sounds like a perfect combo to watch with Doctor Who. I can't wait for more new Doctor Who episodes.
